Trinidad and Tobago can take pride in yet another of its own making waves abroad. Acclaimed Chef Natasha de Bourg, President of the Trinidad Culinary Association, is set to launch Rumhouse—a restaurant that brings the bold and authentic flavors of the Caribbean to Annapolis, Maryland.

The restaurant is opening its doors on Saturday, February 22, 2025, and already, food lovers in the U.S. are paying attention. For many Trinidadians and Tobagonians, Chef Natasha is a familiar name. She has worked at some of the world’s top restaurants, including the three-Michelin-starred Mirazur in France, and has been featured on Bravo TV’s Below Deck Sailing Yacht. Her experience spans over 50 countries, exposing her to an extraordinary range of flavors and techniques, all of which she now brings to Rumhouse. Now, with Rumhouse, she’s creating a space that not only serves incredible dishes but also shares the story of the Caribbean’s rich culinary traditions.

Joining her in this culinary journey is Sous Chef Marlon Timothy, a skilled Trinidadian chef whose expertise complements Natasha’s vision for Rumhouse. Together, they are showcasing the talent nurtured by the Trinidad Culinary Association on an international stage, bringing the essence of Caribbean cooking to a new audience.
“This isn’t just about food,” Chef Natasha told us in an exclusive interview. “Rumhouse is about culture, history, and identity. I want people to taste the Caribbean—not just in flavors, but in spirit. Every dish carries a piece of home, from the spice blends to the cooking techniques passed down for generations.” She added, “Another milestone for me is putting Trinidad and Tobago on the map and flying the flag high in the U.S. This restaurant is my way of leaving a mark and being a trailblazer for Trinidad and Tobago.”
